Exploring begins with our Backyard. Dixie's Travels

Hi Friends and Family,
     Happy St. Patrick's Day!  Scott is Irish and loves his corned beef.  However we are still in Vieques and many locals have never heard of corned beef. Luckily two American bars have celebrations today with CB on the menu.
     Celebrating our heritage is like exploring our own backyard for the first time. The first exploration is the most important. So I will start with a little dog named Dixie. She is a Viequenese Chihauahua and Courtney has adopted her. Yesterday began her first day at SunBay Beach in Vieques, PR.

Vieques is a small island located about 10 miles off the coast of Puerto Rico. The island is 21 miles long by 4 miles wide.  You can get to Vieques by airplane or ferry. The population of Vieques is about 8500 people and the main town is Isabel Segunda.

p.s.  We pan-seared the Hog fish with garlic, cilantro and tarragon.  It was delicious.

First Day on my new Blog as the Codmother of Chatham.

Hello Followers,
My family and I are on vacation on the beautiful island of Veiques, PR.
Its very similar to Cape Cod, MA. I thought it would be the perfect time to start my blog. We are just starting our second week here.
Last evening the neighbors (who also from New England) speared a Hog Fish yesterday and shared half with us. An ugly fish to say the least, but it has spectacular white flesh.
I'm thinking of marinating the farm like fish with some scallions and a lite garlic mayonnaise sauce, wrapping in tin foil and throwing it on the grill.

I will keep you fish informed!
